What you need (serves 4):

  • 250 g breadcubes
  • 125 ml milk
  • 2 eggs
  • 50 g grated Parmesan
  • 250 g strainedspinach
  • 80 g butter
  • 120 g onion – finelychopped
  • 1 garlicclove
  • Breadcrumbs
  • Meltedbutter
  • GratedParmesan cheese
  • Fresh chopped chives
  • Kombu Flakes

Method

  1. Cut the dried white bread slices into cubes and put into a large bowl. Pour some warm milk over the bread cubes and season slightly with salt. Stir in the eggs and let soak for some minutes. Add the grated cheese and spinach and mix well to blend all the ingredients.
  2. Melt the butter, add the finely chopped onions and fry until golden brown. Add the garlic to the onions and continue to sauté for a short time.
  3. Add the mixture to the dough, knead and allow to rest for 30 minutes.
  4. Try to form the mixture into balls. If they hold together well, the dough is fine. If it is too soft and juicy, add some breadcrumbs. If the dough is too dry, add more milk or eggs.
  5. Put the balls into nearly boiling water, reduce heat and simmer over low heat for about 25 minutes.
  6. Heat the butter in a pan until lightly brown.
  7. Drizzle dumplings with melted butter, sprinkle with grated Parmesan, chives and Kombu Flakes
